A sweet side dish...

...featuring my most very favorite vegetable in the world.



The sweet potato.

So easy, and so tasty.

Just a sweet potato, pancetta, and fresh sage cut from my herb garden.

Sweet Potatoes with Sage & Pancetta
  • Slice the sweet potato into spears.
  • Tuck two sage leaves up against each spear.
  • Wrap each spear with a slice of pancetta (or proscuitto, if you prefer)
  • Drizzle with olive oil.
  • Roast in a 400° preheated oven for 20ish minutes.
Don't tell anyone you made them so YOU CAN HAVE THEM ALL.

    Oh YUM!
    My husband actually despises sage (one of his only faults) and so if I made these I really could eat them all myself! :-D

    Oooooo...we eat sweet potatoes almost every night and I'll definitely have to try this one!

    I gotta say, I never ever thought I would ever see a post that discussed your favorite vegetable in the whole world. Ever. Remember those days??? (and ps, isn't a potato a starch, not a veggie?)
