The sweet potato.
So easy, and so tasty.
Just a sweet potato, pancetta, and fresh sage cut from my herb garden.
Sweet Potatoes with Sage & Pancetta
- Slice the sweet potato into spears.
- Tuck two sage leaves up against each spear.
- Wrap each spear with a slice of pancetta (or proscuitto, if you prefer)
- Drizzle with olive oil.
- Roast in a 400° preheated oven for 20ish minutes.

My husband actually despises sage (one of his only faults) and so if I made these I really could eat them all myself! :-D
Oooooo...we eat sweet potatoes almost every night and I'll definitely have to try this one!

I gotta say, I never ever thought I would ever see a post that discussed your favorite vegetable in the whole world. Ever. Remember those days??? (and ps, isn't a potato a starch, not a veggie?)
