This summer, I signed up for a few single cooking classes through Bon Vivant...tonight's class was the first: all about cupcakes. Oh, swoon.
Suzanne Hunter was fantastic. Over the course of three-ish hours, we made eight different cupcakes with nine frostings/ganache/glazes.
And guess which one was the first that I was assigned?
Lemon meringue cupcakes. With a lemon curd filling and the lightest-ever lemony meringue frosting. Surprisingly -- lower in fat as well!
I was in heaven.

I learned a great deal -- and my favorite surprise? There's a cupcake size that I didn't know about! I have pans for a mini, standard and jumbo cupcake. But there's a "small" size, in between mini & standard, that's just the perfect size! Not too big, not too tiny, but just right. I'm on the hunt now for a "small cupcake pan".
I did win the "Wife of the Week Award" because I brought home all my cupcakes to share over breakfast with Jonathan. The only one that didn't make it was the banana rum cupcake -- one version with banana chocolate buttercream, one version with a banana chocolate whipped cream.
The seven remaining below are (clockwise from the top):
- lemon meringue
- red velvet with a vanilla buttercream frosting
- chocolate with a salted caramel filling
- pineapple with a coconut frosting
- vanilla & raspberry with a chocolate buttercream
- carrot cake with a cream cheese frosting
- (in the middle) flourless chocolate toasted hazelnut with a chocolate glaze
Classes ahead...pizza and calzones and celebrating tomatoes. Just in time for my tomatoes in the garden!
