The easiest fruit cobbler ever



You can use all kinds of fruits in this: blackberries, strawberries, raspberries, blueberries, peaches. So so good.  Fresh or frozen.  Either one works.

THE INGREDIENTS
  • 3 TB butter
  • 3/4 cup all-purpose flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 3 cups of sliced fresh fruit (or 16 oz frozen fruit)
  • 1 tablespoon sugar
THE DIRECTIONS
  • Preheat oven to 350°
  • Add butter to baking dish and melt in oven.
  • Mix the dry ingredients (flour, sugar, baking powder, and salt) together.
  • Add milk and mix until smooth.
  • Pour into baking dish w/butter that's been melted
  • Add fruit on top of batter
  • Sprinkle with sugar (I use Penzey's vanilla sugar - delish!)
  • Bake 50-55 minutes until the batter browns and fruit bubbles.
For the trip to Chelan, I made the prep easy by mixing the dry ingredients ahead of time in a ziploc bag.  All I need to do is melt the butter, add 3/4 cup milk to the dry ingredients, and pour into the dish...then add the fruit + sugar topping.

SO excited to try this with fresh peaches and a big dollop of whipped cream!

Easy as pie....er....cobbler!

We make this all the time! I call it the "creepy Crust Cobbler, because the crust ... creeps up to the top!
