You can use all kinds of fruits in this: blackberries, strawberries, raspberries, blueberries, peaches. So so good. Fresh or frozen. Either one works.
THE INGREDIENTS
- 3 TB butter
- 3/4 cup all-purpose flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 3 cups of sliced fresh fruit (or 16 oz frozen fruit)
- 1 tablespoon sugar
- Preheat oven to 350°
- Add butter to baking dish and melt in oven.
- Mix the dry ingredients (flour, sugar, baking powder, and salt) together.
- Add milk and mix until smooth.
- Pour into baking dish w/butter that's been melted
- Add fruit on top of batter
- Sprinkle with sugar (I use Penzey's vanilla sugar - delish!)
- Bake 50-55 minutes until the batter browns and fruit bubbles.
SO excited to try this with fresh peaches and a big dollop of whipped cream!
Easy as pie....er....cobbler!
