Sweet Tuesday Happies

A peaceful evening tonight on the farm. Batching photos right now and taking a break to blog.

Loving, in no particular order...

  • Thomas's first tooth!
    It finally cut through today after two tough nights. I had Thomas duty on Sunday night...slept in the twin bed in his room so he could nurse and relax when his teeth were throbbing. It was a little surreal cuddling up with him in the twin bed that Jonathan slept in as a child. But I absolutely loved waking up in the morning to see the painted walls that Grandpa Ski had painted for Jonathan. As soon as the room is totally cleaned out...you'll see it here. :)
  • An exceptionally yummy dinner. And low in points.
    The rest of the salmon that Jim caught. Sweet corn. I made a roasted garlic and lemon aioli that we used as a sauce on the fish and corn. So good. I ended up making a second batch for the fridge - because it's always better after the flavors have had time to mellow. Clipped some basil, tossed it with fresh tomatoes and mozzarella pearls for an insalata caprese. And my favorite? Brownies. With black beans. Less than 2 points each. Dense and moist. I had originally planned on having Jonathan try them before telling him they were healthier...but I need to learn to not leave my recipes open on his laptop. I sliced them up, tossed them on a sheet in the freezer. When they are frozen, I'll move them to a freezer bag to munch on when the urge strikes. I have memories of frozen brownies as a kid and they were good.
  • A great night last night at Becky's.
    Finally met Angelica, Crystal's sweet little three month old and Thomas's new girlfriend. Had dinner with Crystal, Becky and Sarah - catching up, talking all things wee babe, and relaxed. So good to see them. We've been getting together in the summer for several years now. First year I was engaged, next year I was pregnant, this year, with Thomas in tow. Who knows what's ahead? :)
  • Thomas's first fort.
    Jonathan used to build forts for Viper on the bed. I think it was his way of rebelling against all the throw pillows that I love. This morning, I got a text from Jonathan with the photo below. It said, "Look Mom! Papa built me a fort!"

So what do the black bean brownies taste like? Do I need to try them!?

YUMO!!! One of my friends has a recipe for Black Bean fudge, also like no points. I'll see if she can find it for me....
