Fresh from the oven

I'm in 'using up and cleaning out' mode right now...clearing out stuff for a less chaotic feeling.

Jonathan and I had a major work day on the house on Saturday...cleared out a dozen big boxes of stuff and started making room for a guest room upstairs. At times, it's overwhelming to go through 'three families' worth of stuff - his, mine, and his parents. But we make a little progress each week, and slowly we're getting through it.

Right now, I want cleared counters in the kitchen. Going through and combining like items to reduce clutter. Freezing what I can, and using the rest up. I had a bag of garlic bulbs on the counter that I'd been meaning to get to...and this morning was it.

The house smells so good right now...I took this simple recipe from this month's Clean Eating.
  • Peel the garlic down to leave just a layer or two to keep its shape.
  • Slice the top 1/4 inch off the top of the garlic head to expose the cloves.
  • Using a muffin pan, place each garlic head upright in its own section.
  • Cover the exposed garlic with extra virgin olive oil using your fingers.
  • Cover the entire pan with foil and place in the oven.
  • Bake at 400° for thirty minutes.
  • Do not lick the oven even though it smells heavenly.

Finishing cleaning the kitchen and then it's out in the fields for the Wee Ski and me. We both need some fresh morning air!
