Sweet tastes of summer


Happiness is...wondering what to do with all my cucumbers...only to open my Google Reader and find one of my grandma's recipes online!

Thanks to my cousin, many of my Grandma Bottenfield's recipes are showing up in the next generation. I love that -- especially since the extent of Grandma's activity online in our direction usually is her instant messaging Jonathan. Not her granddaughter, mind you, but her granddaughter's husband.

A few nights ago, I pulled together the cukes while I was waiting for my Spaghetti Squash Casserole in the oven. Both were good...but the cucumbers just scream summer. They last about a week in the fridge - so we've been feasting on them a bit each night.

Summer Refrigerator Cucumbers

  • 1 1/2 cups white vinegar
  • 3/4 cup water
  • 1 cup sugar
  • 2 tablespoons salt
  • 1 tablespoon dillweed
  • 3-4 big cucumbers, sliced (I used a stash of mini cucumbers)
  • 1/2 to 1 onion, as desired
Combine and chill. Good for 1 week or more in refrigerator.

And yesterday, I came home with fresh berries from Spooner Berry Farms. That, in Thurston County, is the best part of summer eating.

Hoping to make some strawberry or raspberry jam this weekend after things calm down a bit.

Charlie and I pigged out on blueberries last night! Raspberries are on the list for Saturday market!

Just wait until you grow your own! They always taste so much sweeter when they come from your own garden. Your plants are still awaiting for you in my garden. Ski said that you might be ready come this fall.
