When Thomas slept in until 8 am this morning (can you hear the angels singing?!?), I had an extra hour to get the kitchen cleaned and finish some Finian Road projects. When he got up for breakfast, I had the chance to make homemade granola while he was eating.
I originally made it for a great portable snack for him, but it tastes so yummy, that it's now an official Ski Family Snack, at home or on the go. I love that this recipe can be completely customized -- I can't wait to add dried blueberries or cranberries to the next round.
Above, the dry ingredients, just before mixing it all together.
The Dry Ingredients
- 2 cups oats
- 3/4 cup brown sugar, packed
- 1/4 cup flaxseed
- 1/4 cup wheat germ
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/4 cup mini chocolate chips
- 3/4 tsp cinnamon
- 3/4 tsp salt
- 1/2 cup agave nectar (or you could use honey)
- 1 egg, beaten
- 1/2 cup canola oil (or you could use 3/4 cup applesauce)
- 2 tsp vanilla extract
- Preheat the oven to 350°
- Spray a 9x13 pan, both the bottom and sides
- Mix the dry ingredients in a large bowl
- Mix the wet ingredients in a small bowl, then pour into large bowl
- Using your hands, mix the wet ingredients into the dry ingredients
- Pat the mixture into the greased pan
- Bake for 25 minutes. Remove when they are golden brown around the edges.
- Let sit for 5-10 minutes, and cut into bars. (I used a pizza cutter)
